{"id":2797,"date":"2021-02-24T17:04:30","date_gmt":"2021-02-24T15:04:30","guid":{"rendered":"https:\/\/www.evlogia.gr\/simmered-pork-with-chestnuts-and-apaki-sauce-from-evlogia-plum-spread-with-hazelnut-aroma\/"},"modified":"2022-10-15T20:47:15","modified_gmt":"2022-10-15T17:47:15","slug":"simmered-pork-with-chestnuts-and-apaki-sauce-from-evlogia-plum-spread-with-hazelnut-aroma","status":"publish","type":"post","link":"https:\/\/www.evlogia.gr\/en\/simmered-pork-with-chestnuts-and-apaki-sauce-from-evlogia-plum-spread-with-hazelnut-aroma\/","title":{"rendered":"Simmered pork with chestnuts and apaki, sauce from evlogia Plum spread with Hazelnut aroma"},"content":{"rendered":"<p>Ingredients<\/p>\n<ul>\n<li>1 kg pork shoulder<\/li>\n<li>1 medium-size onion<\/li>\n<li>2 celery sprigs<\/li>\n<li>1 garlic clove<\/li>\n<li>1 medium-size carrot<\/li>\n<li>250 g (8.8 oz) pre-boiled chestnuts<\/li>\n<li>200 g (7.1 oz) apaki (smoked cold cut), cut into cubes<\/li>\n<li>100 g (3.5 oz) Evlogia<em> Plum spread with Hazelnut aroma<\/em><\/li>\n<li>130 ml dry red wine<\/li>\n<li>50 g (1.8 oz) balsamic vinegar<\/li>\n<li>1 pc asteroid anise<\/li>\n<li>1 tsp. dried ground coriander<\/li>\n<li>6 cardamom seeds<\/li>\n<li>40 g (1.4 oz) olive oil<\/li>\n<li>30 g (1.1 oz) brown chicken broth<\/li>\n<\/ul>\n<p>For the sweet potato puree<\/p>\n<ul>\n<li>1 1\/2 kg sweet potatoes<\/li>\n<li>100 g (3.5 oz) butter<\/li>\n<li>1 lemon (its juice)<\/li>\n<li>nutmeg<\/li>\n<li>salt<\/li>\n<\/ul>\n<p>Method<\/p>\n<p>&nbsp;<\/p>\n<ol>\n<li>Cut the pork into pieces (60 g each). Cut the vegetables into small pieces. Heat the olive oil in a cooking pot and add the pieces of pork one after the other, allowing them to develop a brown crust.<\/li>\n<li>Remove all the meat as soon as it is ready and add the vegetables to fry in the same cooking pot at a medium temperature.<\/li>\n<li>Once softened, quench with balsamic vinegar and allow to evaporate. Add the wine and allow it to evaporate again, this time by two-thirds. Add the meat into the cooking pot again, the spices and the chicken broth.<\/li>\n<\/ol>\n<p>Add water to cover the food and let it simmer.<\/p>\n<ol start=\"4\">\n<li>If it is a metal cooking pot, cover it (as long as the lid and handle are oven safe), and put it in the oven at a low temperature (150<sup>o<\/sup> C, 300<sup>o<\/sup> F, Gas Mark 2) for 1 hour and 45 minutes.<\/li>\n<li>Once the pork is soft enough, add the chestnuts and fry the apaki in a frying pan. As soon as it caramelizes, bring it into the cooking pot.<\/li>\n<li>Simmer for ten more minutes and at the end, add the Evlogia<em> Plum spread with Hazelnut aroma<\/em> to the food. Stir well to bind the gravy and serve.
